Disney Baking... Tsum Tsum Cheesecakes

Welcome back to my Disney baking series and this time we are going to make Donald and Daisy tsum tsum cheesecakes. I love a cheeky little sweet treat, especially when visiting Disney, so I thought I should at least make myself feel as if I’m in Disney with some fun homemade treats. Donald is my favourite character, and I have a nice little collection of Donald and Daisy tsum tsums, so I took some inspiration and decided to make individual lemon cheesecakes that look like cute little tsums.

This recipe is quite simple and quick to prepare which means you can quickly whip these up for Christmas or even if you just want a dessert! If you’re not a massive fan of lemon flavour then feel free to change the flavour profile of your own cheesecakes to anything you want. I quite like a strong citrus zing, so know that these do taste very lemony but it balances perfectly with the creamy sweetness. Below I’ll list all the equipment, ingredients and the recipe with a few tips along the way.

Mixing Bowl
Balloon Whisk
Grater
Saucepan
Wooden Spoon
Sandwich Bag
Rolling Pin
Cupcake/Muffin Tin
Cupcake Cases
Measuring jug

Ingredients
350g Light Cream Cheese
60g Icing Sugar (plus extra for decorating)
2 Lemons (juice and rind)
25ml Double Cream
50g Butter/Low Fat Spread
150g Oat Biscuits
Decorations (I used white fondant, icing sugar, icing pens and edible pearls)
Recipe
Grate both lemons and set aside.
Put the cream cheese and icing sugar in the mixing bowl and whisk till smooth.
Add in the lemon juice and grated zest, lightly whisk.
Mix in the double cream and make sure there is enough air in the mixture.
Put the biscuits in a sandwich bag, seal, then smash with a rolling pin. (This is definitely my favourite bit!)
Melt the butter in a saucepan.
Once melted, take off the heat and add the biscuits.
Add the cupcake cases to the baking tin.
Press the biscuit mixture into each case to make a base.
Put the cheesecake mixture into a measuring jug. (This isn’t essential but it makes it so much easier to pour neatly)
Evenly pour the mixture onto the bases, you should make around 6 mini cheesecakes.
Put the tray into the fridge for at least 2 hours to set.
Dust the surface with icing sugar and roll out the fondant.
Cut out 6 circles of fondant. (Make sure the circles are just a little bit smaller than the cheesecakes)
Decorate the fondant circles with the icing pens to look like Donald and Daisy tsum tsums. (This bit is quite simple, just have a steady hand and take your time! Do more than 6 if needed to get the design perfect!)
When the cheesecakes are set add the fondant faces on top and enjoy!

And that’s it! It might seem like a lot of steps but I’ve just laid everything out separately and simply so it’s easy to follow.
