Disney Baking... Mike Wazowski Matcha Cookies

So recently my boyfriend and I discovered matcha and have become absolutely obsessed with it. We’ve been drinking iced and hot matcha lattes for weeks and I thought that maybe I could incorporate matcha into some of my baking. I assumed whatever I made would naturally become green, because of the matcha, so my mind immediately went to Mike Wazowski from Monsters Inc. I adored Mike when I was younger and even named my teddy bear after him, so I was excited to incorporate this character into my baking.


Matcha has got a lot of health benefits so incorporating it into baked goods does make me feel a bit better about eating them! The taste is naturally quite earthy but it makes these cookies the perfect partner to a bitter coffee. If you have no idea where to get matcha, I got mine from Amazon and it is made by the company PureChimp. This is the most reasonably priced jar that I found online and I would definitely suggest trying a latte with oat milk (as well as the cookies) and tell me what you think!

Equipment

  • Scales

  • 2 Mixing Bowls

  • Wooden Spoon

  • Measuring Spoons

  • Baking Tray

  • Greaseproof Paper

  • Tin Foil

  • Cookie Cutter (I used the lid of my matcha jar)

Ingredients

  • 140g Plain Flour

  • 1tbsp Matcha Powder

  • 1/4tsp Salt

  • 115g Butter/Low Fat Spread

  • 25g Icing Sugar

  • White Fondant Icing

  • Green, Blue and Black Writing Icing

  • White Edible Pearls

Method

  1. Mix the flour, matcha and salt in a bowl.

  2. Cream the butter and sugar together until light and fluffy.

  3. Mix the dry ingredients into the butter and sugar mixture until fully incorporated.

  4. Form a ball of dough (feel free to add flour if the mixture is too sticky to handle).

  5. Put the dough onto a sheet of tin foil and flatten to a disc shape.

  6. Chill for 20 minutes in a fridge.

  7. Line the baking tray with greaseproof paper.

  8. Lightly flour the surface and roll out the dough till 1/4inch thick.

  9. Cut into rounds (just use anything that is round and seems like a good size if you don’t have a cutter.)

  10. Place on the tray and refrigerate for another 10 minutes.

  11. Preheat the oven to 180C.

  12. Remove the cookies from the fridge and bake for 12 minutes.

  13. Remove the cookies from the oven and transfer them to cool on a wire rack.

  14. Put a light covering of icing sugar on the surface and roll out the fondant.

  15. Cut the fondant into small circles as the eye base (I used a top from a soda bottle).

  16. Draw a green circle, on the white round, as the outer iris, then a blue circle inside of that (I also mixed them slightly with a cocktail stick to create Mike’s eye colour).

  17. Fill the middle of the green/blue with the black icing for the pupil.

  18. Add an edible pearl to each ‘eye’ in the direction you want the reflection.

  19. Stick the ‘eye’ to the cooled cookie with a small bit of writing icing, right in the centre.

  20. Enjoy your Mike Wazowski Matcha Cookies!
