Disney Baking... Mickey Chocolate Orange Cupcakes

Yay another Disney baking post! (Well I hope that’s your reaction…) So Christmas has officially rekindled my love of chocolate and orange so I thought I’d incorporate it into another Disney themed treat. I haven’t made cakes in a long time so I found out my old chocolate cake recipe and modified it to make some yummy Mickey chocolate orange cupcakes.

As you all know I love my Mickey cookie cutters so I decided to once again incorporate their use into this recipe; therefore, I definitely would suggest investing the large sum of £8 into getting some for yourself. These little cakes are very decadent and are like a cross between a muffin and a fairy cake. I’d definitely suggest ditching the new year diet for a day just to try these amazing sweet treats though! As normal I will list everything you’ll need to know, from the ingredients to the method, all below and remember to tag me on insta (@howtoholidaydisney) if you try making these yourself!


Equipment

  • Mixing Bowl

  • Balloon Whisk

  • Measuring Jug

  • Measuring Spoons

  • Scales

  • Muffin/Cupcake Tray

  • Baking Paper

  • Scissors

Ingredients

  • 100g Self Raising Flour

  • 140g Light Brown Sugar

  • 75g Chocolate Orange Hot Chocolate Powder (you can use normal cocoa powder but put a bit more orange in later)

  • 1tsp Baking Powder

  • 2 Eggs

  • 125ml Sunflower Oil (you can use vegetable oil instead)

  • 4tbsp Milk (you can use plant based milk, I used oat)

  • 40g Dark Chocolate (finely chopped)

  • 2 Clementines/Satsumas

  • 250g Icing Sugar

  • 100g Low fat Spread/Butter


Recipe

  1. Heat the oven to 180C/Gas mark 4.

  2. Mix together the brown sugar, flour, 50g of the cocoa powder and baking powder in a mixing bowl.

  3. Whisk together the eggs, milk and oil.

  4. Gradually whisk the wet ingredients into the dry till you have a smooth mixture. (make sure to add the mix in slowly and get rid of all the lumps)

  5. Zest the clementines.

  6. Fold the chocolate and zest into the mixture.

  7. Cut 6 long strips of baking paper, then cut them in half.

  8. Grease the muffin tin and create a cross in each hole with the baking paper.

  9. Evenly fill the tray holes with the mixture.

  10. Bake for 25 minutes until well risen and then leave to cool. (put a knife into a cake and if it comes out clean the cakes are done)

  11. Beat together the butter, icing sugar and the rest of the cocoa powder until smooth. (this is the icing)

  12. When cakes are cool, remove them from the tray.

  13. Cut the cakes in half horizontally.

  14. Cut the top half with a Mickey cutter. (and eat the off-cuts if you fancy!)

  15. Spread the icing on the bottom half then top with the Mickey.
